I have the under and my only insight is that this series is typically low scoring

Here are some trends for the under:
Dallas 0-3 this year, 3-8 last 3Y o/u in last 4 weeks of the season
Dallas 1-4 this year, 3-13 last 3Y o/u vs. sub .500 teams
Dallas 0-3, 1-7 vs losing teams in second half of season

OK so Parcells has only been there 2 years not 3 , but I think it shows at the end of the year, he just wants the win especially when playing a losing team he doesnt get in a shootout or worry about running it up.
